BBQ World at Weber Grill Academy Hidden away down a secluded lane among the leafy villages of Oxford's southern commuter belt , and feeling a thousand miles away, is the Weber Grill Academy, Weber's purpose built barbecue cooking school Open all year round The Grill Academy is dedicated to the building, and development of, barbecuing skills as well as all things Weber A highly skilled, and experienced, team of trainers , based at The Grill Academy, are there to share their skills, and understanding, of grilling, roasting, smoking, baking and pretty much anything else you can do with a charcoal or gas barbecue. BBQ World/Dawsons regularly send teams to Weber's Oxfordshire hideaway to expand the boundaries of our grilling knowledge and expertise, having a look at what is new and upcoming in the world of Weber whilst we are there, so it was off in the snow yesterday to make the long journey from Lancashire to Oxford to prod, poke, and play with some shiny barbecuing kit, hopefully picking up some new skills along the way. Clare, the trainer, and Jamie, the chef, Weber's resident team were fantastic hosts inspiring us, cajoling us, and generally keeping us on the straight and narrow as we loosely followed their instructions - leaving the hood of a Weber Summit S-670 up for warmth as snow blew around us on a freezing cold afternoon when the whole ethos behind Weber is that you cook with the hood down was not a good move in Clare's opinion!
Weber were very proud to show us their new Charcoal Pizza Oven which is designed to fit into any 57cm charcoal barbecue, giving the ability to produce pizzas, naans and flatbreads in quantity and at a speed, under four minutes, which should keep all but the most ravenous happy. We weren't able to grill using that shiny new bit of kit though a pizza stone directly put onto the grill of a 57cm One Touch Premium did a brilliant job of producing flatbreads with an aubergine and thyme topping, which Jamie produced from aubergines which had been blackened and scorched over a Weber Chimney Starter. Another use for a Chimney Starter, really everyone who owns a charcoal barbecue should own a Chimney Starter. The revelation of the day for us was the barcecuing of the humble scotch egg which we made from scratch. These tasted amazing after being cooked on a charcoal grill with a couple of handfuls of soaked wood chips - initiallty frozen solid by the ice cold temperatures -tossed on top of the charcoal which gave the meat, or in the vegetarian option falafel, a moist, wood smoky taste way beyond that of any scotch eggs tasted before - definitely a recipe which will be coming out for repeat performances. Not far behind the the scotch egg in the revelatory stakes was the barbecue cooked sticky toffee pudding, not something where word association necessarily leads you to - barbecue + sticky toffee pudding wouldn't be the first thought - but it will definitely will be from now onwards. Light, moist and more-ish, another fantastic recipe from Jamie, which was cooked to perfection in a drip tray, from a gas barbecue, on top of the 57cm One Touch Premium which had just produced the scotch eggs.
weber charcoal pizza oven So a big thank you to Weber, and Clare and Jamie, not only for a great day and a superb lunch - though we did cook it ourselves! -, but for helping us broaden our grilling, smoking, roasting and baking skills whilst having fun. It was a shame about the weather however every cloud has a silver lining. Did you know that if you grill in the rain the dampness in the air gives moister meat? The Weber Grill Academy runs courses which are open to everybody from novices to experts, even running a course on how to cook and prepare food for the festive season, and are all open to non Weber owners
