Recipe hacks to make you barbecue king

Date Created: 4/12/13
Impressing friends at a BBQ can be a gut-wrenching experience, especially when you're trying to find a good recipe that doesn't require the skills of a master chef. But should it really be that much of a pain in the gums? Should it cause so much distress that you end up going to see a therapist to complain about how caviar and poultry can't be barbecued together? No, it shouldn't.

Here are two recipes that you can follow to make the best barbecue your friends have ever tasted.

Recipe hacks to make you barbecue king Turkey, Tomato and Tarragon Burgers

Take 1lb of minced turkey and mix it in a blender with eight sun-dried tomato halves (dipped in oil) and a tablespoon of cut tarragon. Pulse until the fusion is smooth and then pour it into a bowl. Stir this with a handful of finely sliced red onion, and then apply half a teaspoon of paprika and another half of salt.

After mixing, create four burger patties and cover them with a few slices of pancetta or bacon. Secure this with cocktail sticks and throw onto the barbecue. Grill them on your charcoal operated Weber for 20 to 25 minutes and remember to turn them regularly.

Serve with ciabatta rolls, crisp lettuce and shredded radicchio.

Barbecued Snapper

Place 1lb of sliced carrots in a pan on your Weber grill. Cook for at least three minutes on each side. In the last two minutes, throw in two teaspoons of caraway seeds and then place everything into a bowl and keep it warm.

Now it's time to add oil to the grill and cook four snappers for three minutes. As you're doing this, blend one orange and slice another into four pieces and add them to the BBQ. Cook the pieces until they've browned.

Remember the carrots? Take them out and mix with coarsely cut coriander -and add salt and pepper to taste. Lastly, pop in four tablespoons of olive oil and a squeeze of orange juice. Now everything is ready to eat.
These are just two of the many simple recipes that you can use to grill great-tasting food on your Weber BBQ.

They won't take you three years of chef school to master, and they'll impress your friends. So much so that your buddies will think you were trained by Gordon Ramsey himself and that you have the emotional scars to show for it.
